Detailed Product Description

The mini dairy designed and constructed by Mec-Lat Brevetti will satisfy all pasteurization needs in rapid cycles and with excellent energy recovery, including curdling, transformation of milk and cheese fermentation. It is also equipped with tank for whey recovery and ricotta production.
The plant will even run an automatic wash cycle at end of the work process. The specifications and functions of COMPACT DAIRY fully respect EEC Regulation 92/46. It is common knowledge that this standard establishes community regulations for the production and transformation of milk and the respect of parameters with strict quality standards. They prescribe the use of an infrastructure which ensures that dairy products are produced and transformed in observance of precise hygiene and safety standards.
To satisfy these conditions Mec-Lat has registered a patent for the milk pasteurising plant, in accordance with the EEC requirements.
The creation of ready assembled, self-sufficient plant, with a compact design, is the result of a series of considerations at a production and management level aimed at achieving maximum quality of the finished product, not to mention the savings in energy and space.
The Compact plants are complete and self-sufficient dairy operations, that allow to  process 1600 L every shift (usually 3,5 – 4 hours) and 700 litres of Yoghurt per shift.
The plants are designed with automatic continuous heating and/or pasteurizing of milk during the filling of the cheese making vat (or other machines or vats).
The curdling  process in the cheese making vat (more than one can be installed), is achieved according to the specific recipe with the standard accessories supplied with the machine. Once the mixture of curd-whey is obtained, it is then expelled through the drain in the base and channelled onto collection table which may be fitted with or without moulds. The whey is filtered and collected in the tank below and the curd can be transferred to the moulds and set under the press, this obviously regards cheeses that require pressing. When the curd collection tank is free, the whey heating phase is started for the production of ricotta, or if this production is not required, the whey is pumped out of the tank and collected in a tank.
The equipment that makes up the plant is assembled on a stainless steel base and connected together both hydraulically and electrically according to the most suitable flow logic.
On installation of the monoblock dairies in their specific location, it is sufficient to connect the various mains distribution lines: gas/diesel, water and power.
MILK RECEIVING
Milk has to be delivered to the dairy trough cans or milk collecting truck. A pump will pick the milk and send it to the storaging tanks, where it will be chilled or sent strait to the plant for processing.
 
MILK PASTEURIZATION
The product pumped from the storage tanks, will flow trough an Heath Exchanger to be pasteurized and then sent it to the Cheese Making Machine, where i twill be curdled, and porcesses into cheeses or sent it to the Batch Pasteurizer to obtain Yogurt.
