Gardenia Blue (002)

It is a kind of natural edible pigment extracted from gardenia fruit of rubiaceous plant. The main compositions are crocin and cricetin of series of carotinoid pigment. The powder from light gray to smalt is soluble in water and solution of water and alcohol, but insoluble in organic solvent. The environment of PH value has little influence on its hue and stability.
