Brief Introduction: It is a kind of food flavor, also called ethyl methanoate, the use of which is permitted. With the reducibility of active carboxyl and esterfunction in its chemical structure, ester condensation can be proceeded. It is soluble in alcohol, ether, benzene and propanediol and slightly soluble in mineral oil and water (gradual decomposition in water). It is flammable and the explosive mixture can be formed from its vapour and air. It is insoluble in glycerol and easily hydrolyzed into free acid and alcohol in alkaline environment. It smells spicy, pungent, fruity like pineapple and intensely aromatic like rum and tastes a little bitter.
